Creamy Chicken Soup

Ingredients 

  • 1 lb boneless, skinless chicken breasts, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried parsley
  • 1 bay leaf
  • 2 tbsp butter
  • Salt and pepper to taste


Steps

  • In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery, and sauté until they begin to soften.
  • Add the diced chicken and minced garlic to the pot, and cook until the chicken is no longer pink.
  • Pour in the chicken broth, bay leaf, and dried herbs. Season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
  • Remove the bay leaf from the soup. Using an immersion blender or a regular blender, carefully puree the soup until smooth and creamy.
  • Return the soup to the pot and stir in the heavy cream. Simmer for an additional 5 minutes to allow the flavors to meld together.
