Ingredients
- 2 boneless, skinless chicken breasts, cut into small pieces
- 3 potatoes, peeled and diced
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 tablespoons olive oil
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery. Cook until onions are translucent.
- Add chicken pieces to the pot and cook until no longer pink.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low and simmer for 15 minutes.
- Add potatoes, thyme, rosemary, salt, pepper, garlic powder, and onion powder to the pot.
