Chcken Potato Soup Recipe



This 
Chicken Potato Soup has a creamy and flavorful broth with bacon, tender potatoes, juicy chicken, vegetables, and simple seasonings.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into small pieces
  • 3 potatoes, peeled and diced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons olive oil

Cooking steps

  • In a large pot, heat olive oil over medium heat.

  • Add onions, carrots, and celery. Cook until onions are translucent.

  • Add chicken pieces to the pot and cook until no longer pink.

  • Pour in chicken broth and bring to a boil.

  • Reduce heat to low and simmer for 15 minutes.

  • Add potatoes, thyme, rosemary, salt, pepper, garlic powder, and onion powder to the pot.

  • Simmer for an additional 20 minutes or until potatoes are tender.
